July in Monaco means the Odyssey, the palace-class hotel’s summer restaurant sporting a heavenly “haute couture” decor designed by the much-missed Karl Lagerfeld. Each year this haven of peace alongside the swimming pool invites a chef who revolutionises the Principality’s gastronomy. This summer the award-winning Michelin-starred chef Rodrigo de la Calle has brought his Madrid restaurant El Invernadero and his “gastrobotanics”. Which means? The fusing of gastronomy and vegetables into a colourful, creative, authentic cuisine. Backed up by his kitchen brigade, the chef produces unusual new flavours by revisiting fruits, vegetables and aromatic plants. A promise of truly green dining nights.
