France’s youngest Michelin-starred chef returns to her birthplace to take up a gourmet summer residency at Calade restaurant in the Radisson Blu in Nice, which is celebrating its 25th anniversary. Born in Nice to an Armenian father and a mother of Sicilian origins, Sedefdjian was raised as a food lover and turned to cooking at a very young age. At 14 she entered the Lycée Hôtelier Paul Augier and did her internship at Aphrodite with David Faure, one of Nice’s top chefs, where she learned to cook with precision, technique and perseverance. Sedefdjian then left for Paris where she made her debut at the Michelin-starred Fables de la Fontaine restaurant, rising through the ranks with remarkable speed. She became sous-chef in just a few months, quickly gaining experience by leading a full team at the age of 18. Following the chef’s departure, Sedefdjian was directly appointed in his place, at only 20 years of age! The Michelin guide confirmed the star and at 21 she became the youngest Michelin-starred chef in France, and a media sensation.
Today in her Michelin-starred Parisian restaurant, Baieta, she prepares sunny Mediterranean cuisine with seasonal ingredients. And until 30 September, at the largest rooftop restaurant in Nice in the Radisson Blu, food lovers will be able to discover a “bistronomique” side to Julia Sedefdjian’s culinary identity, executed by chef David Rodriguez (with dishes that include zucchini flowers stuffed with ricotta, candied lemon and sage, salted crumble, confit rock octopus, hummus and chard with ink sauce).
