September 2007. With a career already marked by big names (Eden Roc, Byblos, Tour d’Argent, Lapérouse, Mas Candille...), a 30-year-old chef unpacked his utensils in the Negresco's kitchens. The hotel's gourmet restaurant, Le Chantecler, proved well worthy of this Best French Craftworker's creativity, for that was the start of a great culinary adventure that in 2012 led to two-star recognition by the famed Michelin guide. Consistently and seriously defying trends, this worthy heir to Auguste Escoffier has for 10 years been giving his utmost to respect the place's identity while infusing his contemporary vision of sun-soaked cuisine. To milestone this date, Le Chantecler's kitchen staff decided to pay Jean-Denis Rieubland tribute by revisiting his classics in a 10th Anniversary Menu: crab with verbena variations and Corsican lemon jelly by Valentin Fouache; Dublin Bay prawns roasted with di Colonnata bacon by Jérémy Brun; veal sweetbreads with liquorice by Maxime Serigne; and to finish, Solliès figs roasted in Earl Grey tea with 67% dark chocolate cream and crunchy walnuts by Fabrice Didier and Charles Bernard.
