Brass luminaires, burgundy leather banquettes, a chic bar, a magnificent chandelier... The Café de Paris’s 18-month renovation programme has certainly paid off. Opened in 1868 as the Café Divan, Monaco’s oldest brasserie now boasts two floors with terraces offering incomparable views over the Place du Casino. Chef Victor Marion’s “Parisian brasserie on Mediterranean soil” offers a range of popular dishes, including onion soup au gratin, eggs mayonnaise with a touch of caviar, pâté en croute, and crêpes Suzette. “We wanted to cook to share, to offer customers an experience: fine service in the dining room, carving, flambéed dishes...,” says the chef, who can rely on the talented Noël Bajor – he moved to the Hôtel de Paris from Louis XV-Alain Ducasse – as his sommelier.
