Hugo Gallet and Nicolas Bouchet have just opened a shop in Port de Nice. Bouchet’s father instilled in him a passion for the sea and oyster farming, and the two friends launched the Bouchet brand on the Côte d’Azur. The unique oysters from this family-run Etang de Thau business thrive on an innovative, patented system designed to replicate tidal movements, resulting in exceptional oyster meat. The same high standards are applied to selecting other shellfish and crustaceans offered at this new establishment, house-marinated to perfection but never adulterated.
