"I'm not a Marseille guy, I was born in Château-Gombert," says this inveterate joker [Château-Gombert being another of Marseille's urban villages]. Greg Hessmann's bar is the place to be for Marseille's young hipsters. "I did three years of business school," he says, "and then went to South Africa where I worked in a café-cum-deli-store; I got known as the Frenchie with the must-go bar. That's where I met Edouard Giribone. When we both came back in 2003 he cooked for Honoré in Rue Sainte; I took over there when he opened Ca Blanca. We were full all the time." Then came Spok, a concept dreamed up by Christophe Juville, and in 2013 the opening of La Relève, "A bar where everyone is mates and the food and drink are good." He finds his life "tiring but a great buzz" and agrees that he is frank and cheerful by nature. No doubt that's why people flock to his bar.

Rodolphe is a mate and he does good work. I sit at his bar counter and when he has time he makes me an anchovy, rocket and fromage frais roll. Deadly. Crusty as can be.
