It's nearly ten years now since Olivier and his wife Jeanne opened the CO2. The place is now a definite fixture in the area. The village, rather, as the orange-clad chef calls it. A network of streets where everyone knows everyone. His customers have become his friends and the regulars are legion. And who wouldn't keep on coming back for Olivier's frank, generous and authentic cuisine? The main dish consists of a main ingredient, one accompaniment and a sauce that reveals the unexpected without masking any flavour. Finger-lickin' good! Olivier is passionate about tastes and that shows in the menu. Might he be opening a wine bar soon? He says that wine is like him, good and generous. His motto? "Make the most of life, eat well and drink well."
