A Relais & Châteaux hotel by the water’s edge in Porto-Vecchio, with Pascal Cayeux’s cuisine to savour on the beachside terrace. This is perfect chic.
Chic here means an immense view of Lecci beach in South Corsica, a big dining room in contemporary style with wood, fine paintings and refined tableware, and sophisticated Michelin-starred cuisine that will astonish your tastebuds. The menu, tuned to the season, changes every two weeks. Indeed the meat and fish change daily, depending on the day’s market. Pascal, who took over the kitchen in 2010, says he has no speciality: «I like everything in good cuisine,» he says. But he does love traditional farmhouse recipes, especially pot-au-feu and blanquette, to which he adds with his own slant. «I’m much fonder of calf’s head than foie gras. And I love pigs’ trotters, sweetbreads, kidneys and so on. Not forgetting fish. All fish. This is Corsica after all!» At table we can let ourselves be lulled by the magical silence, the sea and the far horizon. Relaxed, we can gaze for long minutes at the sky. After the meal we can take a stroll in the garden, almost at the water’s edge. But it’s a good sign if you choose to linger on in the dining room – and Pascal is betting that you will.
