Julien and Manon Toppin, owners of the Grand Hôtel Henri in L’Isle-sur-la-Sorgue, have entrusted Johan Triart with the new patisserie in this family institution. The young artisan draws his inspiration from the seasons, brings lightness to his recipes by limiting the use of sugar, and prefers ingredients from short organic supply chains. At teatime, the patisserie is festooned with desserts and savoury snacks. An adjoining bookshop invites you to linger. And at lunchtime, the savoury selection is equally tantalising.
