It’s the return of hotels on the Canebière. The opening of this Mercure marks one of the high points of the 2019 autumn season. The 19th-century Haussmann-style building consists of 3 premises merged into a 4-star hotel with 90 rooms, a brasserie, two meeting rooms and a co-working area. The decor was entrusted to architects Tangram. The suite on the top floor with its terrace overlooking the city centre, the Palais Carli and the Marché de Noailles, with Notre-Dame-de-la-Garde in the distance, is unique. Sylvain Touati, formerly Lionel Lévy’s sous chef at the Intercontinental-Hôtel Dieu, has taken over the management of the hotel’s kitchens. He draws his inspiration from all around the Mediterranean, while the brasserie, Le Capucin, promises local seasonal products, reflecting Marseille’s particular cuisine.
