PAIN À L’AIL
Ambassador for Provençal cooking.
Linda has launched a new street food concept in the Opéra district, reinventing local dishes as she goes. What she’s done is to turn Provençal dishes like daube, aioli and bouillabaisse into fillings for classy, crusty baguette sandwiches. Also on the menu are cuttlefish omelette and a Provençal lobster roll (lobster, lemon mayonnaise and brioche, baked with olive oil). The focus is on local producers and suppliers: Emki Pop ice cream, beer from Zoumai, cheese and yoghurt from Laiterie Marseillaise, wine from Marseille Winery.
