Nestled in the cove of Corton, Villa Madie overlooks the Mediterranean while its chef Dimitri Droisneau, who was awarded his third Michelin star this year, shines in the firmament of French gastronomy. His wife Marielle is by his side, welcoming guests at reception. She is the muse of this outstanding restaurant in Cassis. “Obtaining the third star is a childhood dream come true, but it won’t change our fundamental principles,” he explains. “We are innkeepers at heart. We cultivate the art of hosting, entertaining guests, and above all, surprising them with our attentiveness!” A keenly sensitive man, Dimitri Droisneau delights in a tomato, a little violet or a sardine that will pay tribute to his mother’s cooking. “Emotions and memories nourish my cuisine. When I put a dish on the menu like sardine and caviar with apple soufflé and potato mousse with bonito, it’s an homage to the herrings and apples in oil that I was crazy about as a child!” A memory of Normandy that he combines with accents from Provence, such as his pinewood smoked veal sweetbreads accompanied by citron, olives and artichokes. The South, his adopted homeland, is where he likes to recharge his batteries, whether on his mountain bike, paddle boarding at sea, or wearing his diving mask; activities as essential to his happiness as the pleasure of strolling around his village and chatting with its residents, who consider him one of their own.
