When Alexandra et Christophe Bacquié left for new adventures in Provence, it was only natural for Fabien Ferré, their second-in-command, to take the helm. He runs the whole 5-star hotel, but especially the kitchen of its gastronomic restaurant, now renamed the Lavinia. Fabien Ferré goes for local produce and Provençal cuisine with the accent on sea food and vegetables. Backed by his faithful crew, he’s determined to make the most of the new challenge and keep all the Michelin stars.
