Though they call it a country palace, Les Baux-de-Provence's latest gem remains grounded in its roots. Today the old farm estate offers a wealth of environment-friendly pleasures.
Domaine de Manville's buildings are laid out in the typical manner of traditional Alpilles farmsteads, forming a U-shape around a central area where, as on village squares, a fountain plays and tables are dotted about. From the start, salvaged wood and recycled materials tell us that planet-saving chic is the rule here. A big orangery-style glass roof makes the most of the last sunlight and adds a final touch of elegance. Nearby is the swimming pool, a long south-facing rectangle surrounded by sun loungers. Manville is a treasure crafted by Edith and Patrick Saut, one they describe as "a haven of peace, a subtle composition of small pleasures to place end to end". The 30 guestrooms and suites are housed in the former farm buildings, their walls lovingly preserved and restored. Each enjoys its own view of the outdoors: the age-old plane trees, the swimming pool, or perhaps the golf course. Terraces, gardens, glazed duplexes, colours, materials... everything here makes for a relaxed, relaxing way of life. Decorator Annie Zeau says she designed Manville "like a home more than a hotel, with no concept or preconceived idea".
Wonderful food and an elegant spa
Chef Steve Deconinck serves up Les Alpilles and Provence in his gourmet bistro and in his mouth-wateringly gastronomic restaurant. In the spa, maritime pine, royal jelly and olive oil are the vital ingredients in the hotel's own product range. Soft fragrances of verbena and jasmine accompany massages, bubble baths and similar delights.
Another plus: the golf course
Golf course architect Thierry Sprecher has similarly respected both site and location (the Plaine des Baux). The old 9-hole course has become an 18-hole one that echoes the agricultural context. Low dry-stone walls frame greens and tee grounds integrated into the landscape; grassy bunkers, rows of tall trees bordering fairways, olive groves and water hazards intersperse garrigue and terraces. The 5535m, 72-par course is the first to be Ecocert certified; although diverse and technical, it is in perfect synch with its natural setting and nature protection standards. Exceptional work dictated by an exceptional environment – the Cité Haute des Baux and the Alpilles mountains, a nature reserve and listed heritage – and environmental protection standards. Mistral and sun do the rest, nurturing drought-tolerant grasses and nectar-rich plants announcing wonderful home-grown honey!
