Dan Bessoudo took over this hilltop village restaurant in 2004 and won it a Michelin star in 2008. He is one of the few chefs to have trained alongside Alain Solicières and Guy Savoy. Toulon-born Bessoudo, a man of independent spirit, imbues the place with his characteristic style and tastes. He commissioned Olivier Frémont to refurbish the restaurant from top to bottom. A huge picture window looks out across the valley while the ceiling, composed of broken mirror pieces, destructures the space, creating fluidity and a lovely play of light. The menu is a studied masterpiece and the food fully lives up to expectations: creative recipes, cooked and seasoned to perfection.
