He could have been a doctor or a banker but somehow cooking took over. When Sylvain Floutier moved into this legendary village restaurant in January he was fulfilling a long-standing dream. “I came to cuisine by chance, when I took a job in a pizzeria in Vitrolles,” he says. He’s on his own in the kitchen, and the menu comprises two starters, two mains and two desserts: short and sweet! The 36-year-old Escoffier disciple puts the accent on value for money: “I want to offer a moment of total honesty,” he says. He does, and it’s great.
