Charlène and Raphaël dreamed of running a guest house with a kitchen garden and ethical dining, to “prove that we can limit our consumption and respect nature”, says 29-year-old former merchant navy officer Raphaël. His sister concocts a menu in which “every dish is vibrant with goodness for body and soul”: no meat, little fish, cold tisanes, juiced vegetables, natural or biodynamic wines. The two enthusiastic botanists have found their vocation – and some very happy customers.
