Ippei Uemura, born 38 years ago on the outskirts of Kyoto, opened his new seafront restaurant in October. It gives him the big dining room he wanted: 40 places inside and 10 out on the terrace. The Tabi faces the Vallon des Auffes on one side and looks seaward on the other, as if to put a seal on the chef’s love of the sea. “I wanted more room in the kitchen as well as front of house, for greater comfort,” he says. In the restaurant, maplewood pairs with traditional china in shades of deep blue. Six people in the kitchen and six front of house keep it all going. There are iPads that display the menu, take your order instantaneously, and let you watch the kitchen crew at work.
