Confectioner Baptistin Fouque set up his nougat shop in this small village in the Var in 1864. Since then, four generations of Fouques have preserved the know-how that makes their nougat a not-to-be-missed experience. To our unfailing delight the family continues to nurture its gourmet passion, adding new recipes to the old ones that have long been favourites far beyond the region. Officially one of France's "hundred-year-old family firms" (Entreprises Familiales Centenaires), Fouque is the 11th oldest confectionery maker in France. It's now Rodolphe Nicolaï-Fouque who heads the firm and takes care of its heritage. Christmas is a nougat time of year, it being one of the traditional 13 desserts, so head to the firm's historic home in the village of Signes to stock up.
