The vaulted rooms of this restaurant near the Aix law courts seemed just right for his style of cuisine. “The aim is pleasure. If my wife and I are happy, so will our customers be,” says the 40-year-old chef, classed as a “Young Talent” in the 2015 Gault & Millau guide. “I want to get back to basics. Let’s stop making it so complicated. My cuisine is based on local produce, in season. It’s about good produce in the hands of someone who really cares. If you have perfect produce, most of the hard work is already done. All you have to do is season it, cook it and choose what to serve with it.” QED!
