You know you’re in Italy as soon as you walk through the door. All of Italy, actually. The pizzas and foccace are lovingly prepared by Amadeo, who’s Sicilian, and Gaëtano, who hails from Imperia. They are cooked in a wood-fired oven and they are totally delicious. David of the Calabrian accent, standing behind the big zinc-topped bar, shakes up some great cocktails while at the stove is Angelo, from Rome, concocting luscious risottos and pasta, meat and fish dishes. All the ingredients, scrupulously selected, come either from local producers around Saint-Rémy or from the best Italian suppliers. Fratelli is the brainchild of Jean-Christophe from Parma; he and his 11-strong Italian team sings a tavola to the diners’ delight. Friendliness, sharing and discovery are the bywords, from 8am coffee to midnight limoncello.
