‘‘My sports career won’t last forever; I have to think of the future,’’ says a smiling Florent Manaudou, who has just openeda restaurant called La Piscine (‘the pool’) on Quai de la Mairie. He has decked it with blue tiles like a swimming pool and has drawn his friends Yohann, Jean-François and Momo into the adventure. In the kitchen, former Master Chef contestant Georgiana produces sunny Southern fare: eggs mimosa with bottarga, anchoïade and thyme panisses followed by ceviche of tuna marinated in lemon and coconut milk or an open sandwich of aubergine caviar and sardine fillets marinated in oriental spices. ‘‘I love a challenge,’’ say Florent Manaudou, ‘‘and the restaurant is one. It’s good to have more than one passion.’’
