Thomas Le Roux, 40, and Olivier Lefebvre, 35, have set up a small brasserie. The two friends met eight years ago and wanted to put their shared passion into practice. “Beer is a complex, fascinating, living product. France used not to be a beer country, but things are changing,” says Le Roux. Beer, a working man’s drink, “offers new flavours, with some beers low in alcohol but very hoppy, or else very fruity or floral”. Alongside their three flagship beers they are brewing seasonal novelties.
