For its fourth season this luxury hotel has hunted out a talented 27-year-old to succeed Laurent Brunacci in the kitchen. It’s Jérémy Scalia’s first post as chef de cuisine and he heads a staff of five. “This work should be fulfilling; if the staff take pleasure in their work the restaurant will fill up. It’s essential,” says the young Marseille native. Ralph Huesgen, the hotel’s owner, is a true foodie and he’s laid down guidelines for the chef. “I’ll be serving southern fare, Provençal, Mediterranean,” says Jérémy Scalia. “A menu rooted in its home ground, with locally produced ingredients.” Scalia’s years with Eric Frechon and Lionel Lévy have had an impact, but he owes his passion for cooking to his family, where, he says, “everybody cooks”.
