his first love: bistro style cuisine, a bistronomic menu based on fresh local produce and, always, plenty of vegetables. After running the kitchens at La Coquillade in Gargas for nine years he’s now going all out for natural flavours, spotlighting the basic ingredient and cooking it whichever way he fancies. “That’s how the customers get the most enjoyment,” he says. With his wife Virginie front of house, Renaud is welcoming the summer with energy, enthusiasm and a discovery formula where you share the food around the table.
