He’s 43 and made a name for himself at Château de Mazan in the Vaucluse, where he stayed for 12 years. Now Franck Pujol has come to the Mas d’Entremont in Aix, whose proprietor had been enchanted by his “delicious, generous cuisine that unites extremes”. Hot and cold, sweet and savoury, land and sea: Franck Pujol loves to play with contrasts. He has added a few luxury ingredients to the menu, like Aquitaine caviar and foie gras. And rarities like Provençal petit-gris snails and abalone as well as sharing his taste for rare ingredients, the new chef likes to work closely with local producers and offer guests organic fruit and vegetables whenever he can. He’s also written a cookery book, De la terre à l’assiette.
